If you could eat a big bowl of pasta, mixed with your favorite protein and veggies, and topped with some marinara and parmesan, but without all the unhealthy calories, wouldnt you be in heaven? Well….I’m here to tell you, we’re all in heaven!
Years ago, I found myself always being bloated, way too full, and just simply uncomfortable after eating pasta dishes. It took me some time to realize that the carb heavy (not to mention no nutritional value), food was irritating my stomach and causing inflammation. I thought to myself; If I could only find a substitute that wont make me uncomfortable, tastes great, is healthy for me, and is just simply delicious, my life would be made! That’s when spaghetti squash changed my life!!
It’s shaped like pasta, its filling, and it provides plenty of vitamins! A 1 cup serving provides only 40 calories, 5.4mg of Vitamin C (which is about 10 percent of the recommended daily intake). Other Vitamins include B6, Thiamin, Riboflavin, niacin, folate, pantothenic acid, and vitamin K. The flavanoids contained in this vegetable play a role in protecting the body from cancer.
It is so simple to make!! Grab one from the supermarket, cut it in half vertically, poke holes on the skin side. Place skin side up in a baking dish (filled with 1 inch water) and cover with aluminum foil. Into the oven it goes! Bake on 450 for 40 minutes. Larger ones need a bit longer.
Out of the oven it comes….let it cool. Scoop out the seeds and the extra gunk from the middle. Take a fork and scrape the insides….it will come out in strands, just like pasta! It typically makes enough to have for a few nights.
You can mix it with your favorite protein and veggies for a complete meal! My favorite way is to saute some spinach, mushrooms, and onions, and add it to the squash. Top with chopped grilled chicken, tomato sauce, and a sprinkle of parmesan or mozzarella! There you have it…an amazing meal, around 250 to 300 calories that no one can resist!! I promise you will want it every night of the week!!
